Obsessed

So, I have been on a few vacations these past few weekends and what I LOVE to do is scope out all the wonderful ACAI bowl options! I look up pressed juiceries wherever I visit and try to taste as many bowls as I can! I just love them!!!! Here are a few of my bowls that I discovered while visiting San Diego! Some were your typical acai bowl, and some were bowls I have never seen before! The flavors were all amazing and if I could live solely on bowls, I would! LOL!

San Diego Blenders

What I loved about this place were the different fruits they used in their bowl. I tried a Brazilian Acai Bowl which included watermelon, mangos, kiwi and pineapple! Not only on the top of the bowl, but mixed throughout the acai blend. Everything was from scratch, the fruit was ripe and full of flavor! It was quite a different experience that I would definitely try again! As far as location, not cute. It was in a run down shopping strip mall and it wasn’t the cleanest one I have ever been to!

I also ordered for my family the typical acai bowl which was called Acai Only bowl. This was the most unusual acai bowl I have ever seen or tasted. It was more like an ice cream texture than that of a typical acai bowl. It was like I was eating a dessert! IT was almost TOO sweet for me and my kids! And you got 3 scoops of the acai and then it was smothered with banana, strawberries, and blueberries! Needless to say my kids and husband devoured one each!

Nekter

This is one of my ALL time favorite places to visit when down south! I feel like they are one of the best juiceries around! Their food is always fresh and all their ingredients are whole and clean. Their peanut butter come from Sprouts and they will show you all their ingredients upon request! I not only order acai bowls from here, but I also order their Toxic Flush to clean my system out in the morning as well as their Watermelon Mint for a tasty afternoon pick me up! One morning I ordered a Peanut Butter Acai bowl. This we lighter in color and had a robust peanut butter taste! It was different then a typical acai bowl and I thought it tasted great! I would probably not order it again because I like more of the fruitier flavor when devouring my bowls! But it was super yummy!!!! No complaints! As far as location, I visited two while in San Diego. One was in the Liberty Station which was SUPER clean and very effiecient! The other was the one downtown, not as clean and VERY slow!

The next visit to Nekter was a Banana Berry Acai bowl…mmmmm,mmmmm, good! I did devour it on the beach so maybe that’s why it tasted better than ever! They do top it off with Agave Nectar, but I always ask for my bowl without it! One thing that separates Nekter from other places is their Hemp Seed granola! Out of this world amazing!

 

Juice Crafters

WOW! This was a find while riding our bikes around Coronado Island…and what a find it was! We took a little break, I ordered a bowl to share (This was the most expensive bowl @13.75, but one of the largest for that price). I ordered the Protein Acai Bowl that inluded an Amazonian Acai with Guarana-which is a natuarl Energy Supplement, Vanilla Protein Powder, Almond Butter (which was scooped and placed right on top of it all!), and almonds, strawberries, bananas, and walnuts! My kids had more than I did, I was barely able to get a few bites in! But that just shows how yummy their bowl was. It was only 293 calories with 14 gms of sugar-all natural of course coming from the fruit! This bowl was different then all the rest because of the protein added to it-which I loved!!!! That kept you a bit fuller and you got some protein too!!! Location was AMAZING! You wanted to just sit and hang out all day and they were VERY clean and VERY fast!!!!

Our friends ordered the Brazilian Acai Bowl, equally yummy, equally devoured by both parties!

Acai Bowls at Home

Acai bowls are all the craze these days as Acai is said to be beneficial for your health. They provide more antioxidents than strawberries and blueberries, which is good to have in your system so that it can protect you from illnesses. Also, there are a list of other important benefits like iron, calcium, fiber and vitamin A (foodfacts) . You can buy them pretty much anywhere depending on where you live, but I also try to make these at home for the fam in the morning-when I have nowhere to be! Here is the recipe I have found that is closely related to most popular acai bowls out there! But don’t just stick to the basic one, there are so many wonderful variations out there! Just simply search it on any search engine or social media platform! Top this off with peaches, strawberries, bananas, almonds, granola, chia seeds, unsweetened coconut, and anything else you can imagine!!! Enjoy!

          Basic Acai-blend all ingredients below:

  • 1 cup of frozen berry mix
  • 1 frozen banana
  • 2 tsp Acai powder-I bought mine from Sprouts
  • 3 tsp rolled oats-I use gluten-free-can buy from anywhere, even Target!
  • 2/3 cup unsweetened almond milk-my favorite is Califia
  • 1 tsp honey or maple syrup

Spinach Flank Salad

This was the BEST salad yet!!!! My hubby marinade and grilled the flank steak that we purchased from Costco. Can I just say the meat was INCREDIBLE!!!!! I just text him this marinade from one of my favs, Skinny Taste, and I came home to the most amazing meat to add to my spinach salad…which I added tomatoes, red onion, cucumber, micro greens, topped off with hemp seed! For the dressing I just added balsamic, olive oil, and salt and pepper…enjoy!!!!

Easy Holy Guacamole!

There are so many wonderful guacamole recipes out there on the web that it can get overwhelming! And most of the time when I think about making guac, I usually don’t have all the ingredients on hand! However, I always have these three items on hand which makes this recipe the easiest! I simply took two avocados and smashed them all up, added lime juice (I usually buy the bag at Costco and juice them all so they don’t go bad before I have to use them), salt, half a white onion, and that’s it! Nothing fancy here, but SO tasty I want to eat it all…and I did! You can add tomatoes, garlic, roasted corn, and so much more! But this is perfect for those lazy summer nights when all you want to eat is guac and some healthy chips…or veggies! Enjoy!

Blueberry Paleo Cake Donuts

This morning I had these yummy donuts for breakfast! My favorite topping was the almond butter and unsweetened shredded coconut! To softened by almond butter, I added olive oil after warming it up in the mircowave. I added oil until I liked the consistency of the almond butter. The more spreadable, the better! Then I topped it off with the shredded coconut. The original recipe can be found at Laura Lea Balanced. She offers two ways to make these Blueberry Cake donuts, Gluten Free or Paleo; I chose the Paleo version which makes them lighter and fluffier…even though they were still pretty dense. I also chose the sweeter version, put in more coconut milk then maple syrup. I thouroghly enjoyed this for breakfast today! Make sure you don’t put in less blueberries! They make the donut perfect!

Whole 30 Coconut Bites

These coconut bites from The Clean Eating Couple not only taste amazing, but are Whole 30 compliant!!!! My sister even enjoyed them and she never eats clean! Lol! (I used almonds instead of pecans because that is all I had and I added some protein)

 

 

 

 

 

Almond Butter Breakfast Cookies

Over at Laura Lea Balanced I discovered her Peanut Butter Breakfast cookies and decided to make them! What I love about her site is that there is an option in every recipe to make it Vegan or Paleo, or to fit anyone’s lifestyle! I chose to make these with almond butter instead of peanut butter because that is what I had enough of on hand…and I added mini chocolate chips-dairy free, nut free, and soy free ones-to add a little surprise to your tastebuds! They turned out so delcious! My kids even had one and thought not bad for a “healthy” cookie-especially at breakfast time! Here is her recipe below:

INGREDIENTS

  • 1 cup rolled oats
  • 1 (packed) cup pitted Medjool dates
  • 3/4 cup unsalted, unsweetened peanut butter (sub almond, cashew or sunbutter or tahini)
  • 2 large eggs, whisked (sub flax or chia eggs for vegan)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt

DIRECTIONS

  1. Preheat oven to 350 degrees F and line a baking sheet with parchment paper.
  2. In a food processor, combine oats and dates and pulse until combined into a chunky mixture, approximately 10 pulses.
  3. Add remaining ingredients and pulse until ingredients are incorporated and you can only see tiny pieces of dates and oats. Carefully remove blade from processor.
  4. Place a bowl of room temperature water between the baking sheet and food processor. Dampen your hands in the water to prevent sticking, and roll dough into 2 1/2 inch balls. Place balls on baking sheet, leaving at least 2 inches between each.
  5. Wet a fork and use the tines to gently press down on each cookie until it is approximately 1 inch thick. You can turn the tines in opposing directions to create a cross-hatched look.
  6. Bake for 11 minutes, then allow to cool completely before enjoying them.

My notes:

  1. I added 4 or 5 mini chocolate chips by Enjoy Life on each cookie after I pulled them out of the oven…(I found enjoy life chocolate chips at good old Target!!!)
  2. *Make them smaller when making your balls, they bake better and aren’t so dense:)

 

The BEST Chimichurri Sauce

Skinnytaste.com is one of my favorite sites for quick and easy recipes! Did I mention super yummy too? Well this sauce has become a staple in the family as well as on the holiday menu! It is SO tasty, paleo, vegan, clean, everything friendly! Check out the original recipe and many more over at SkinnyTaste and make it a part of your weekly dinner plan! It is so versatile…you can put it on pretty anything!

  • 2 packed tbsp parsley, finely chopped
  • 2 packed tbsp chopped cilantro
  • 2 tbsp red onion, finely chopped
  • 1 clove garlic, minced
  • 2 tbsp extra virgin olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp water
  • 1/4 tsp kosher salt
  • 1/8 tsp fresh black pepper
  • 1/8 tsp crushed red pepper flakes, or more to taste

Here I put it on some steak kabobs…the original recipe from Skinny Taste uses it on flank steak. I used a NY sirloin steak and marinated overnight with only salt and pepper.

Easy Roasted Zuchini

With summer here and all the beuatiful produce available in Fresno, I just love grilling me some veggies! However, when it’s 112 outside, I prefer to roast my veggies in the over-even though it heats up my house a bit-I would rather that then 112 degree sun beating down on me:). Last night with about 30 mins to prepare dinner before we had to hit the road running, I grabbed two zucchinis from the fridge and sliced them up. Poured a bit of OO (Oilive Oil)-not a lot! This is the difference beyween soggy veggies and crispier veggies-salt and pepper and done! Put them in the over for about 20 mins or so at 350 degrees. I like to broil them for a bit so they get browned on both sides! (Yes, this means flipping each one individually). But it’s worth the effort! No, my kids don’t always eat the veggies I make. They have to try them if they have never had them or they have to have 2 if they don’t like them! Nevertheless, it always means more for me and some for lunch the next day!
